Tzatziki offers a lot of benefits, and is really simple to make. Most of the time is spent straining the ingredients rather than actively cooking.

Ingredients

1 cup low-fat greek yogurt, strained

1/2 cucumber, grated and dried

2 tablespoons lemon juice (1/2 lemon)

1 tablespoon dill, ideally freshly chopped

Other Ingredients

  • Black pepper- to taste
  • 4 dashes salt, or to taste

Instructions

Step 1:

Use a filtering tool (i.e. coffee filter) and begin draining the yogurt. Let this sit for an hour draining as much of the liquid as possible.

Step 2:

Grate the cucumber using a cheese grater. Then pat dry your grated cucumber with paper towels until they are relatively dry. The place them on a dry paper towel and cover with an other. Lightly press it down to draw out the liquid and let sit for 10 minutes. If either paper towel is too wet, replace it and do this until you are done draining the yogurt .

Step 3:

Combine all of the ingredients and mix vigorously to spread the flavor. Let sit for 5 minutes and enjoy! We recommend pita chips or using the tzatziki on your sandwiches or with dipping vegetables

  • Leftovers should be covered and can last 3 days in the fridge.
