Veggie Loaded Sloppy Joes

Looking to increase your veggie intake but still want that traditional Sloppy Joe flavor. Try this healthier alternative rich with fiber, iron, and Vitamin C!
Serving Size: 3/4 cup meat + 1 bun
Food Group Servings
1 small, green bell pepper, diced
1 small, red bell pepper, diced
1 small onion, diced
1 pound, 93% ground beef, ideally grass-fed
Oil (Olive, canola, etc.)- spray okay too
6 whole grain sandwich buns
- 1 tablespoon white vinegar
- 3/4 cup ketchup
- 3 tablespoons mustard
Spray a medium skillet with the cooking spray over medium heat.
Add the ground beef, diced peppers and onion to the skillet. Cook on medium heat until beef is cooked thoroughly, about 8-10 minutes.
While the beef is cooking, mix the vinegar, ketchup and mustard together. Add this mixture to the beef and simmer on low heat for 10-15 minutes.
Scoop one portion onto each sandwhich bun. For extra flavor and if available, top each with a lice of sweet onion.
