Cutting Knife, Large Bowl
Salads don’t always have to be made with boring old lettuce! Try this salad made with spinach for a different taste. Oranges give it that “sunshine” flavor, but feel free to add any fruits you desire.
Serving Size: 1.5 cup

5 cups spinach, packed, washed, and dried
1/2 red onion, sliced thin
1/2 red pepper
1 cucumber, whole, sliced
- 1/3 cup vinaigrette dressing (“lite”, around 15 calories per tablespoon or less)
Toss all ingredients together in a large bowl. Add dressing and toss again.
