Bring one cup of water to a boil. Once boiling, add in your rice and bring to a simmer. Cover your rice and let sit until ready. Typically this is around 25 minutes, so you should be able to do all other pieces of the dish while this is cooking.
The Beans
Step 1:
Drain and rinse your beans.
Note: Draining and rinsing your beans helps to remove a large portion of the sodium.
If Warming your Beans on a Stove top:
Add your beans to a second sauce pan. Add in 1/2 teaspoon of garlic powder, paprika, and cilantro in with the beans and lightly stir together. Cover your pan and bring to medium-low heat while the rice cooks
If Warming in the Microwave
If you are doing this in the microwave, save it for last. When you do use this method, add the rinsed beans to a microwave safe bowl. Drop in 1/2 teaspoon of garlic powder, paprika, and cilantro in to the bowl. Microwave to your desired temperature. Check ever 30 seconds to ensure they are not overheated.
The Vegetables and Shrimp
Step 1:
Add in 1 tablespoon of olive oil to your frying pan and bring to medium heat on your stove top.
Step 2:
Once warm, add in your diced bell pepper and onion. Then season with the garlic powder, paprika, cilantro, black pepper, and red pepper flakes. Mix around the ingredients. Then cook until the vegetables soften, stirring intermittently.
Step 3:
Once the vegetables begin to soften, you can add in the shrimp the the pan. Once you add them, you can sprinkle in 1-2 dashes of salt and more of the previously listed herbs and spices for added flavor. Mix around the ingredients to spread around the flavor. Cook for about 5 minutes or until the shrimp are cooked through.
Bringing it Together
Step 1:
Once all pieces are ready, plate your rice, followed by the beans, then the vegetables and shrimp.
Tips & Tricks:
Seasoning amounts merely a guideline. Feel free to mess with the portions. The only one we are concerned with is salt if you have blood pressure issues.
Looking for spice? Add in a few dashes of cayenne when you add the shrimp.
This dish can be done with other proteins like fish and chicken.
