Ingredients

*Warning: If you are using a pre-made pesto, then try to find a low sodium variety. Pre-made sauces are usually high in sodium

1 Salmon filet, 4-5 ounces

1 teaspoon garlic powder, if making own pesto

1 teaspoon onion powder, if making own pesto

1.5 teaspoons dried basil, if making own pesto

Others

  • 3 Tbsp Pesto Sauce- if using pre-made
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

Step 1:

If baking using an oven, preheat oven to 425 degrees F.

This recipe also works well in an air fryer. If using an air fryer, preheat to 385 degrees or follow your fryer instructions for salmon/fish.

Step 2:

       Season filets. Lay the fish skin-side down in baking dish. Spray or rub in the olive oil. Sprinkle fillets with the salt, pepper, garlic powder, onion powder, and basil. Rub seasoning into fillet. 

Spread the pesto sauce over the fish, evenly covering the fillets. If using cherry tomatoes, add the cherry tomatoes to the sides of the fish.

Step 3:

Cook the fish. Bake uncovered in the preheated oven for 12 -15 minutes until the fish is opaque and begins to flake with a fork.

If using an air fryer, “fry” fish in for 8-10 minutes. After timer is done,  check to ensure fish is fully cooked and flakes easily with a fork.

Tips & Tricks:

To make a complete meal add a grain and vegetable choice. Suggestions include: Grains: Whole Wheat Spaghetti,  or Herb Potaotoes Vegetables:  Side Salad, Kale, Asparagus, broccoli.
