Ingredients

6 shrimp, frozen or fresh

1/4 cup brown rice (jasmine, basmati good also)

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1/4 onion, diced

1 tablespoon olive oil

1/2 tomato, diced

1/2 lime or lime juice

1/2 tablespoon cilantro

1/2 tablespoon paprika

1 teaspoon garlic powder

Other Ingredients

  • 1.5 teaspoons of soy sauce (ideally low sodium)
  • Crushed red pepper- to taste
  • Black pepper- to taste

Instructions

The Cilantro Lime Rice

Step 1:

Add 1/2 cup of water to your saucepan and bring to a boil.

Step 2:

Once boiling, add in the 1/4 cup of brown rice, lime juice, and cilantro. Lower heat to a simmer, and cover until cooked (20-30 minutes)

The Shrimp

Step 1:

Dry your shrimp with a paper towel and then season with a dash of salt, paprika, crushed red pepper, and garlic powder.

Step 2:

Add a tablespoon of olive oil to your frying pan and bring to medium heat.

Step 3:

Once warm add your shrimp to the pan. Cook on each side for 3 minutes.

The Guacamole

Step 1:

Take 1/3 an avocado and dice it to small cubes and add to a bowl.

Step 2:

Add the diced onion and tomato to the bowl with avocado. Add one dash of salt to the top. Using a fork, mash and mix together to a desired consistency. The more you mix the creamier the texture.

Bringing it All Together

Once everything is ready, plate the rice followed by the shrimp and top with the guacamole.

Tips & Tricks:

  • For extra heat and spice, consider adding cayenne pepper
  • This recipe can also be done with chicken; 4 ounces (size of your palm) is a good amount.
