Dice chicken into 1 inch cubes. Coat chicken in 1/2 tbsp of olive oil. Season with salt, pepper, Cajun seasoning, onion, garlic powder and, oregano, making sure to mix and coat evenly. If you have time, let sit for 30 min to 1 hour.
Step 2:
Cook Chicken by preferred method:
Sautee in pan at medium heat. Spray pan with cooking spray. Add chicken. Cook till done, stirring well.
Air Fryer: Preheat airfyer to 390 degrees F. Once preheated place chicken cubes in air fryer with space in between (you may need to do several rounds as you do not want to overcrowd the air fryer. Lightly spray with canola or olive oil to help them brown in air fryer. Set air fryer for 12 minutes. Halfway through (at 6 minute mark) pause cooking, to flip chicken over. Finish cooking. Ensure chicken is cooked through.
Note: Air fryer temps may be different depending on air fryer.
Step 3:
While chicken is cooking, rinse the can of black beans thoroughly using strainer. Heat a small non stick skillet with tsp of olive oil and add diced garlic and onions, let simmer 2-3 minutes until aromatic.
Step 4:
After a couple minutes, and onions start to turn clear, add rinsed black beans to skillet. Season with garlic and onion powder. Stir in well, let cook for about 5 minutes.
Step 5:
Dice avocado, tomato, and onions. Toss together with lemon juice.
Step 6:
Plate chicken, black beans and tomato avocado salsa on a dish. Enjoy!
Tips & Tricks:
To make this more kidney friendly decrease servings of black beans and chicken to half of what is listed.
