5 shrimp, frozen or fresh
2 eggs, scrambled
5 cherry tomatoes, halved (optional)
1 ounce of cheddar
- 1 flour tortilla
- 1 dash salt
- Crushed red pepper- to taste
- Black pepper- to taste
The Shrimp and Tomatoes
Spray your pan with cooking spray and bring to medium heat. While it is warming up, cut your shrimp in half
Once warm, add in your shrimp and tomatoes to the pan, followed by your desired spices. Stir occasionally for 5 minutes
We mentioned salt, red pepper flakes, and black pepper above, but other good ones for this dish include cilantro and paprika.
After the 5 minutes of cooking remove the shrimp and eggs, and pour in your scrambled eggs. Let the eggs cook through lifting the edges to let any excess egg pour directly on the griddle.
Once your eggs are cooked (about 3-5 mins), place your tortilla down on top of the eggs. Press it into the eggs so all of the contents are secure and quickly flip the pan so the tortilla and egg are in your hand and set back in the pan tortilla-side down.
Brining it Together
With your tortilla now cooking, put all of your ingredients (shrimp, tomatoes, and cheese) on one half of the tortilla and fold the other half over the contents and press it down so the tortilla seals. You now flip the quesadilla occasionally until the cheese melts or your desired crispness of the tortilla.
NOTE: if the tortilla starts to smoke lower temperature and flip more frequently to prevent burning
Consejos y Trucos:
- Extra spice can be adding by cooking with more crushed red pepper or adding cayenne to the shrimp while cooking them.
