Dishes created with eggs are an easy way to add vegetables to your breakfast. Try this recipe out to use up any left over veggies you have in your pantry!
1/2 cup shredded cheese (Cheddar, Swiss, Mozzarella)
1 tsp garlic powder
3 eggs
1 cup non-fat milk
1 cup mixed vegetables chopped (broccoli, peppers, onions, mushrooms, etc.)

1 pie crust, baked, 9-inches
½ tsp salt
½ tsp pepper
Instructions
Step 1:
Preheat oven to 375°F.
Step 2:
Mix the eggs, milk, salt, pepper, and garlic powder in a medium bowl with a fork or whisk. Add the cheese and vegetables and gently stir to combine. Pour mixture into pie crust.
Step 3:
Bake for 30-40 minutes, or until a knife inserted near the center comes out clean.
Step 4:
Let the quiche cool for 5 minutes before serving.
Tips & Tricks:
Play around with your vegetable choices. Try broccoli, peppers, all can work.
