In a small bowl, whisk together eggs, 1/2 of the shredded cheese, salt and pepper.
Step 2:
Spray skillet with cooking spray. Once heated, add diced peppers and let simmer for 2-3 minutes.
Step 3:
Add whisked eggs to skillet. Stir until cooked to preference.
Step 4:
In a seperate skillet (or same if you only have 1, just take the eggs out first!); spray skillet and let heat up. Add tortilla. Let heat up for 10-15 seconds and flip over. Add remaining cheese and let it slightly melt into tortilla, for about 2 minutes.
Step 5:
Add scrambled eggs to tortilla and fold in half. Let it heat up for about 1 minute to let cheese continue to melt. Before folding, add more cheese if necessary. Flip over to cook the other side.
Step 6:
Serve on a plate and enjoy!
