Ingredients

10 eggs

1 red bell pepper, diced

1/2 green bell pepper, diced

1/2 onion, diced

1 cup spinach

6 slices cheddar cheese (1 ounce per serving)

2 cloves garlic

1 tablespoon olive oil

Other Ingredients

  • dash of salt
  • black pepper- to taste
  • crushed red pepper- to taste
  • cilantro- dried or fresh; optional

Instructions

Step 1:

Cut up all vegetables to a size you would like. We recommend dicing them into inch squares, but whatever you prefer or what is easy for you.

Step 2:

Place your frying pan on your stove top and bring to medium heat. Add the olive oil to the pan.

Step 3:

Once warm, add all vegetables and spices to the dish except for the spinach. Stir occasionally until the vegetables soften

Step 4:

Once the vegetables are softer, add in the spinach until it is cooked down.

Step 5:

When the vegetables are all set, scramble your eggs in a bowl and add them to the dish and let sit for a few minute until the underside is solidifies and it is mostly cooked through

Step 6:

At this point, you are ready to flip the frittata in the pan. Take a plate and place it over the top of the pan. Applying light pressure to the middle of your plate, quickly flip it so the uncooked side is down on the plate. Now that it is on the plate, place it over the pan again and using your spatula, slide it back into the pan so the uncooked part can finish. Once back in the pan, add the cheese to each section you are going to make.  Click Here for Video Instructions

  • Alternatively, if you have cast iron skillet, pre-heat your oven to 375 Fahrenheit, before cooking and when the eggs are solid on the bottom, top with the cheese the same way and place in the oven
