Recipe makes 1 serving.

1 green onion
1/4 cup leafy green (spinach, kale, etc.)
- ¼ teaspoon black pepper
- Dash of salt (optional)
Crack the eggs into a small bowl, add salt, pepper, and scramble with a fork.
Pour eggs, green onions, and kale or spinach into a non-stick skillet over medium heat. Stir constantly.
Cook until the eggs are firm.
Tips & Tricks:
- Add in 1/4 cup reduced fat cheddar or mozzarella cheese for extra flavor and protein.
- Add in a dash of milk for a creamier and fluffier texture to your eggs.
- Use rubber utensil to stir the eggs to keep them fluffy!
