1 green onion

1/4 cup leafy green (spinach, kale, etc.)

2 eggs

Other Ingredients

  • ¼ teaspoon black pepper
  • Dash of salt (optional)


Step 1:

Crack the eggs into a small bowl, add salt, pepper, and scramble with a fork.  

Step 2:

Pour eggs, green onions, and kale or spinach into a non-stick skillet over medium heat. Stir constantly. 

Step 3:

Cook until the eggs are firm. 

Tips & Tricks:

  • Add in 1/4 cup reduced fat cheddar or mozzarella cheese for extra flavor and protein. 
  • Add in a dash of milk for a creamier and fluffier texture to your eggs. 
  • Use rubber utensil to stir the eggs to keep them fluffy!
