Pour quinoa into a sauce pan with water. Bring to a boil and stir, add in 1/2 of the blueberries and half of the banana. Reduce heat to a simmer and cover the pot. Let quinoa sit for 15-20 minutes to absorb the water and get fluffy.
Step 2:
Mash the other half of the banana with a fork in a small bowl or on a plate.
Step 3:
When the quinoa is ready (no excess water in the pan, and visible “tails” on the quinoa), add the mashed banana and remaining blueberries.
Step 4:
Stir, allowing blueberries to thaw if needed.
Tips & Tricks:
Try adding in peanut or almond butter for a nutty flavor and a little extra protein.
Instead of water, you can try using milk as a base.
